If you’re not familiar with the term keto, it means low carb, so this is also a low carb chili recipe. You can eat this chili plain in a bowl or even use it as a topping on a keto hot dog.
This quick low carb chili recipe makes 10 servings. Each serving has roughly 620 calories and 8 net carbs.

Each recipe fits a low carb profile and will help you burn fat, even if you have no clue how the science actually works. I’ve done all that background work & research for you. You just get to cook and eat.
I opt for recipe sizes that leave lots of leftovers so that I always have food on hand to combat cravings. You can cut down the recipe size if you have a small household or don’t care for leftovers. Be sure to read all the instructions & shopping notes before starting.
Ingredients
- 5 pounds ground beef
- 48 ounces salsa (two 24 ounce bottles)
- 1/4 cup chili powder (about half a large bottle)
Utensils
- 1 large wok
- 1 ladle
- 1 slotted spoon
- 1 spatula
Cooking Instructions
- Brown the ground beef in your wok on High heat (about 12 minutes).
- Don’t drain the fat.
- Vigorously stir in your salsa and chili powder.
- Reduce heat to Low and simmer 10 minutes.
- Serve chili using a slotted spoon to let excess drippings fall through.
- Optional: Top your chili with shredded cheese, sour cream, and jalapenos.
Note: If someone in your household isn’t fond of the chili drippings, you can use a ladle to siphon them off the top before serving.
Eating your Keto Chili
After 20 minutes, remove from heat and serve.
You can eat the chili while it’s simmering if you’re starving (hence the 10 minute prep time). The simmering just helps the flavor sink in a little deeper.
Eat your chili as a standalone meal or serve it atop a bed of steamed cauliflower (Green Giant now sells “steam in the bag” microwaveable cauliflower rice in the frozen veggie section of HEB — it’s legit). No cauliflower? You can serve this on top of any steamed veggie. Just microwave the bag of veggies while the chili simmers.
Optional: Top your chili with guacamole. I use the pre-made guacamole they sell at the grocery store. Sour cream and shredded cheese are also good low carb toppings if you’re eating dairy.
Shopping Notes
- I used 80/20 ground beef, but anything between 80/20 and 90/10 fat content works.
- Any brand of salsa and heat level are typically fine. They should have 2-3 carbs per serving. I used a mix of mild and medium store brand salsa for this recipe.
- Any brand of chili powder is fine.

Have you considered adding Black Soybeans to make it more authentic? Black Soybeans have about 1 Net Carb in a 1/2 cup serving according to Carb Manager. This since the majority of the carbs come from the tomatoes…you could just increase the chili powder for the flavor…..but it would likely not increase the net carbs and might even reduce it a little…while adding some needed fiber to this dish!
