Low-carb BBQ
The best part about a low-carb diet or keto diet is that you can still enjoy BBQ. Most BBQ meats are high in protein and healthy fats, so you can enjoy these meals without worrying. It’s not really the meat that’s the most significant issue; it’s the side dishes you need to skip. Forget about tater tots, think about cauliflower is a great alternative. Think cauliflower tots instead. Low-carb is easy to follow if you make the right substitutions. For instance, instead of potato chips, you should be eating Brussels sprout chips or our keto cheesy chips.

Grilled Short Ribs with Cherry Tomatoes & Hot Pepper Sauce
This recipe is low-carb, low-calorie, gluten-free, dairy-free, and soy-free…oh my! It also contributes to a healthy immune system and contains a very low quantity of sugar. Score!

230 calories, about 16 grams of fat, 4.8 grams of saturated fat, 500 mg of sodium, 4.6 grams of carbohydrates.

These are the ingredients you need for this quick and easy recipe:
Ingredients
- 1 pound of boneless short ribs (we chose boneless because it cooks faster)
- 1 teaspoon of salt
- ½ teaspoon of finely ground black pepper
- 1 cup of parsley (you can also use cilantro if you prefer)
- 1 pint of red cherry tomatoes
- 1 clove of garlic
- 2 tbsp of olive oil
- 2 tbsp of red wine vinegar
- 1 tbsp of lemon juice (freshly squeezed is best)
- ¼ teaspoon of chili flakes or crushed hot pepper
Directions
- Preheat your grill to medium-high heat.
- Sprinkle your meat with a mix of ½ a teaspoon of salt and ½ a teaspoon of the ground black pepper. Make sure to rub well so the spices penetrate the meat.
- Grill the ribs until charred on both sites. Make sure to keep turning the meat occasionally. Check the interior temperature of the ribs and make sure it is at least 125 degrees Fahrenheit. This will make the meat medium-rare, grill for an additional 20 minutes for well-done ribs.
- Next, cook your tomatoes in a grill basket until they begin to burst, for about 7 or 8 minutes. The time it takes for them to be grilled depends on the size of the tomatoes.
Make the Sauce
The hot pepper sauce gives the short ribs that special taste. It’s a twist on the classic recipes which always use BBQ sauce or a tartar sauce.
- Place the garlic, remaining salt, pepper, and herbs (hot pepper flakes) into a food processor.
- Pulse for a few seconds or until the mix is finely chopped.
- Keep the processor running and add in the vinegar, oil, and lemon juice. Keep pulsing until you have a well-blended sauce. If you want a chunkier version, don’t process as much.
Now that you have your sauce, you can put the sauce onto the ribs and enjoy your meal with the side of tomatoes.
If you want to substitute the tomatoes, the following are some options:
- Zucchini
- Bell pepper
- Mushrooms

These low carb veggies make excellent side dishes, and they are suitable for low-carb and keto diets. In order, the zucchini cooks fastest, followed by the peppers. The mushrooms must be grilled for a few more minutes longer than the others.
